Renkon grown locally in Kosaka in the northwestern part of Kanazawa, is highly valued as Kaga Renkon outside Ishikawa prefecture. Grated and steamed renkon mixed with pieces of eel, jew's ear, lily bulb, ginkgo nut and other ingredients is an example of the refined taste of renkon dishes.
